A review of the Weber 721001 Smokey Mountain Cooker. The good as well as the bad.

The Good:

If you are looking for a honest to goodness free standing smoker that will deliver  authentic   down home smokehouse flavor. This one will do the job,very well.

You can cook a whole turkey and an entire ham all at the same time. If you want moist fall off the bone ribs,or tender smoked brisket then slow cooked is the way to go.The grill is made of steel which is coated with porcelain-enamel. After cooking should be a snap to do cleanup. There is a water pan,which you can add water,spices,rub,liquid smoke,to make the meat more moist and flavorful . The steam from this porcelain-enameled water pan really makes meat tender. There is a thermometer to tell how hot the grill is inside. Also the smoker contains 2 nickel- plated 18 1/2 inch-wide cooking grates. Nickel is very tough and the grates should with proper care,clean-up should last a long time. There are 4 no-rust aluminum vents on bowl and lid,as well a heat-resistant nylon handle,as well as a cover.The ash is collected in the bottom of the grill. If you want real down-home smokehouse flavor at home? This grill really delivers.

About Weber:

The grill measures 19 by 19 by 41 inches,with a 10 year limited warranty.Weber has a really good support staff and they take care of their customers. When  the founder of Weber made the first grill,he was looking for a grill that would be better that even his customers expected. I have a kettle grill that’s at least 25 or 30 years old. The finish on the outside is like new. Of course one of the foot holding it up has broken off. But i still do a lot of grilling with it.

The Cons:

I really had to look for something wrong with this weber smokey mountain cooker. They had a mix-up at the factory a few years ago and was sending the wrong size grates with the cooker. But weber’s fixed that.And some complain about the fuel door being a pain to adjust. With the size of the fire box you would need to cut your wood down to fit,and split it. Or use wood chips with your charcoal. Also the water pan can get unstable and hard to handle. You can fix that with a trip to the hardware store,and a few minutes work.

Also the aluminum door doesn’t want to seal properly. You can get a wood stove gasket to make the door seal. Cooking on both top and bottom grates can be risky. The bottom grate is closer to the fire,and a person would need to keep an eye on the meat cooking there. It could get done too quick if you were cooking brisket on the bottom grate. I would cook something like ribs,or chicken that wouldn’t hurt getting done faster. I don’t like a vertical style,normally. But this one has me wanting one. I had a small one about 35 years ago that cooked great. The problem with it was no way to add charcoal or wood to fire,except take barbecue and grate off. Remove water pan and then add charcoal or wood. But Weber has fixed that,with the aluminum fuel door.

Also,i understand the smokey mountain cooker smoker grill maintains heat very well and doesn’t need to have wood or charcoal added as much as the side box smokers. Some people even use the WSM for cooking contests. Due to the style of the smoker you will need temperature probes hooked up so you don’t need to raise the lid and let out the smoke and heat. This one is a winner,price is low and it should all the smoking you will need with little maintenance.

The Minion Method

The minion method of setting up your grill is supposed to control the burning of the charcoal and wood chips. Even though you might want to open the fire door and add wood chips.When you use this method you can keep the top closed on the grill for hours. Most experts say you can go for 6 and even 8 hours with a slow burn of charcoal and wood.If you have a meat thermometer you can monitor everything outside the grill. The video above goes into great detail showing how to put the charcoal and wood into the grill.Using a chimney,you can get your barbecue cooking in no time. You also can get the wsm in the 22.5 size.
