How Does Airflow Control Heat?
More oxygen makes a bigger fire. Less oxygen makes a smaller fire. Exhaust has to stay open enough for the fire to breathe. Use a snake: two briquettes wide, one or two high, lit at one end. Meat opposite the fire. Bottom vent is the dial. Top vent stays mostly open. A water pan over the cool side is optional.
